Dirty Rice Recipe

People have been asking about what Dirty Rice is....well this recipe is as close as I can find to how I make it....

3 chicken gizzards

3 chicken livers

1/4 cup butter or margarine

1/4 cup green onions, finely chopped

I always put in a whole can of French onion soup.

1/3 cup white or yellow onions, finely chopped

1 cup chopped celery  - I also put in one can of Celery Soup

1/2 cup chopped green bell pepper

1/4 cup parsley flakes

3 cloves garlic, crushed

1/2 pound ground beef

1/4 tsp thyme

red pepper to taste

salt to taste

4 cups cooked rice

Preheat oven to 325 degrees

1. Cook gizzards in water to cover until almost done. Add livers, cook until tender. Chop.

2. Heat butter in large skillet. Add green onions, yellow or white onions, celery and green bell pepper. Cook over low heat until vegetables are soft. Add parsley flakes, garlic, giblets and ground beef.

3. Cook over low heat for about 20 minutes, stirring until well blended. Add thyme, salt and pepper. Add rice, mix well.

4. Spoon into casserole. Bake in oven for about 20 minutes or until bubbly.

Serves 6

 

My mom never put hers in the oven.  I don't either, I cook mine on the top of the stove...

You can add whatever kind of meat you like to it.

    gizzards & Liver??? I am used to the Zataran's mix!! Can you replace it with just beef??? Sorry I am a very picky eater!~!

    I just use gizzards in mine, no livers. I also use brown rice. To hold it all together I use chicken broth. Add one bunch of chopped cilantro for a nice little kick.

    [THUMBDOWN] Sounds yucky (sorry). My in laws make a barley dish whenever they cook a turkey. I never ate much of it, and now I refuse to eat it after I discovered it's made with the "stuff" in that package you find inside the turkey. [OHMY] I think Blogster needs a gagging icon. [TONGUE][HEART]
